mela's spring salad

Spring is here and the farmer’s markets are back in action! This is our go-to salad to celebrate all of spring’s beautiful bounty.

If you want to make this salad more substantial to enjoy as a main dish, try adding diced grilled chicken, cooked salmon or your favorite bean.

A note on local, seasonal foods: We always encourage shopping at your local farmer’s market when possible - eating locally grown, seasonal foods benefits you (often better nutrient profile, always tastes best) and our planet. Supporting local farmers is one of the best ways that you can vote with your fork to move our food system towards a more sustainable future.

MELA’s spring salad
serves 2

Ingredients
2-4 cups chopped gem and romaine lettuce (or your favorite greens)
1 cup halved strawberries
big handful sugar snap peas, thinly sliced
handful (~1/4 cup) roasted almonds, chopped (we love Massa Organics)
handful of mint, roughly torn
1-2 tablespoons your best extra-virgin olive oil (we love Olio Verde and Brightland)
1-2 tablespoons thick, high quality balsamic (we love Napa Naturals grand reserve 25-star)
flaky sea salt

optional, to serve:
cooked protein of choice (chicken, salmon or beans)

Directions

  1. Combine all ingredients through mint in a large bowl. Drizzle with olive oil and balsamic (starting with 1 tbsp each) and season with a pinch of flaky sea salt. Toss and taste, adding more oil and/or vinegar to taste.

  2. Top with protein of choice, if using, and enjoy immediately!
