tahini roasted broccolini

tahini roasted broccolini (adapted from What’s Gaby Cooking)
Yields 2-4 servings

for the lemon garlic tahini sauce
1/3 cup tahini (we love Soom Foods)
3 tablespoons freshly squeezed lemon juice
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
1/4 teaspoon ground cumin
sea salt and freshly ground pepper
4 tablespoons ice cold water, plus more to reach desired consistency

for the broccolini
2 bunches broccolini (or ~4 cups broccoli florets)
1 tablespoon extra-virgin olive oil
sea salt and freshly ground pepper
3-4 tablespoons lemon garlic tahini sauce

Directions

  1. Preheat your oven to 423 F and line a sheet pan with parchment paper for easier clean up. Toss the broccolini with olive oil, salt and pepper directly on the pan and roast until crispy and charred, ~20 minutes.

  2. Meanwhile, make the tahini sauce: whisk together all ingredients in a glass jar or bowl, adding more water as needed to reach desired consistency. Season with salt and pepper to taste.

  3. Remove the broccolini from the oven, toss with 3-4 tablespoons of the tahini sauce and return to the oven for 2-3 minutes longer. Enjoy!
