MELA's summer salad

 

Hands down our favorite way to celebrate all the gorgeous summer produce. This is our go-to salad for the summer months - we always get rave reviews when we bring it to summer BBQs, but it’s just as perfect for your weeknight side salad. Or add a protein (we love grilled chicken!) to make it a complete balanced meal!

MELA’s Summer Salad
serves 2+

Ingredients
greens of choice (we love arugula, little gem and radicchio)
cherry tomatoes, halved (we especially love sun golds and flavor bombs if you can find them)
peaches or nectarines, sliced
fresh herbs, torn or roughly chopped (we love a mix of dill, mint and basil)
sliced avocado and/or toasted pine nuts
Balsamic and lime vinaigrette (recipe below), or simply toss with good balsamic (we love this), extra-virgin olive oil, salt and pepper

optional additions:
grilled or raw corn
sliced radishes
chopped cucumbers

Balsamic and lime viniagrette:
3 tablespoons extra-virgin olive oil
1 tablesooon balsamic vinegar
1 tablespoon fresh lime juice
1 tablespoon honey


Directions

  1. Prepare the vinaigrette: add all ingredients o a glass jar or bowl and whisk/shake to combine. Season with salt and pepper to taste.

  2. For the salad, combine all ingredients in a large salad bowl. Toss with 2 tablespoons of the dressing, adding more to taste as needed.
