MELA's Caesar

 

We put Caesar salad in our comfort food bucket (especially when paired with grilled or roasted chicken and our go-to sweet potato fries - the best). This is one of our all time favorite recipes - like traditional Caesars, we make ours with raw egg and anchovies, but if you are avoiding raw egg for pregnancy or otherwise, don’t worry, we have a modification for you!

To serve, we either go the purist route (toss with chopped romaine and top with grilled chicken breast) or sometimes, we’ll also add shaved parmesan and/or halved cherry tomatoes. This dressing is absolutely delicious on any green, so follow your heart.

MELA’s Caesar
yields enough for 1 large salad (serves ~2-4)

Ingredients
1 garlic clove, minced
2 anchovies (filets in oil), or substitute 1 tsp anchovy paste
1/2 tsp salt
1 raw egg yolk (or substitue 1 tablespoon mayonnaise)
1 tbsp worcestershire sauce
1 tsp lemon juice
1 tbsp red wine vinegar
2 tbsp extra virgin olive oil
1 tbsp Dijon mustard
freshly ground Pepper to taste

Directions:

  1. Combine all ingredients in a mini food processor or blender and process until thick and well combined. Enjoy immediately or store in the refrigerator for up to 2 days.
