3-ingredient banana cookies

Our healthy take on oatmeal chocolate chip cookies are easy to make and oh so delicious. Perfect for a sweeter afternoon snack or an after dinner treat.

3-ingredient banana cookies
Yields 20-24 cookies (serving size: 1-2 cookies)

Ingredients
3 large ripe bananas
1 ½ cups gluten-free quick cooking rolled oats
2/3 cup semi-sweet miniature chocolate chips (such as Enjoy Life)

Directions

  1. Preheat oven to 350 F degrees and line two cookie sheets with parchment paper.

  2. Using the back of a fork, mash bananas well in a large bowl. Stir in oats and chocolate chips and mix well until ingredients are well combined.

  3. Using a tablespoon, scoop out 20-24 even sizes cookies and place them on the sheet pan, leaving a little space between each cookie. Bake in the oven for ~20-25 minutes, or until cookies are set and lightly golden. Remove from the oven and allow to cool.

  4. Once slightly cooled, enjoy cookies immediately or store in the refrigerator in an airtight container (cookies are equally delicious chilled!)

tip: cookies will stay for ~4 days in the refrigerator and can be frozen for up to 3 months (thaw overnight in the refrigerator before serving).
